Onion50 g
Bell pepper75 g
Large eggs200 g
Olive oil7.5 ml

Black pepper0.2 g

Instructions

Dice potatoes into small cubes (about 1 cm). Finely chop the onion and bell pepper.

Heat olive oil in a large non-stick pan over medium heat.

Add diced potatoes and cook for 8-10 minutes, stirring occasionally, until they start to soften and brown.

Add chopped onion and bell pepper to the pan. Cook for another 5-7 minutes until vegetables are tender.

While vegetables are cooking, whisk the eggs in a bowl with salt and black pepper.

Pour the whisked eggs over the vegetables in the pan. Reduce heat to low.
