Dairy-Free Protein Banana Pancakes

Ingredients
- Unsweetened almond milk500 ml
- Peanut butter50 g
- Oat flour (or quick oats processed into flour)150 g
- Olive oil (for cooking)10 ml
- Ripe banana160 g
- Dairy-free protein powder80 g
- Baking powder10 g
Instructions

In a large bowl, mash the ripe banana until smooth.

Add the unsweetened almond milk, protein powder, oat flour, baking powder, and peanut butter to the bowl. Whisk until just combined – don't overmix. A few lumps are okay.

Heat a non-stick skillet or griddle over medium heat and add a small amount of olive oil or cooking spray.

Pour approximately 80ml of batter per pancake onto the hot surface.

Cook for 2-3 minutes per side, or until bubbles appear on the surface and the edges look set. Flip and cook for another 1-2 minutes until golden brown and cooked through.
