Ingredients (Serves 2)

Cooked chicken breast (diced or shredded)225 g
Potatoes300 g
Onion100 g
Bell pepper150 g
Large eggs4 unit
Olive oil8 ml
Smoked paprika5 g
Salt5 g
Black pepper3 g

Instructions

Dice the potatoes into 1.5 cm cubes. Finely chop the onion and bell pepper.

Heat the olive oil in a large non-stick skillet over medium heat.

Add the diced potatoes and cook for 10-12 minutes, stirring occasionally, until browned and tender.

Add the chopped onion and bell pepper to the skillet. Cook for 5-7 minutes until softened.

Stir in the cooked chicken breast and smoked paprika. Cook for another 2-3 minutes until the chicken is heated through.

While the vegetables and chicken are cooking, whisk the eggs in a bowl with salt and black pepper.

Pour the whisked eggs over the skillet mixture. Cook, stirring gently, until the eggs are scrambled and cooked through.
