Creamy Protein Oats with Banana and Peanut Butter

Ingredients (Serves 2)

Oats60 g
Unsweetened almond milk350 ml
Dairy-free protein powder65 g
Banana80 g
Peanut butter25 g

Instructions

Combine the dry oats and unsweetened almond milk in a saucepan.

Bring to a gentle simmer over medium heat, stirring occasionally. Cook for 5-7 minutes, or until oats are creamy and cooked through.

While oats are hot, stir in the dairy-free protein powder and peanut butter until well combined and smooth. The residual heat helps the peanut butter melt.

Mash or slice the banana and stir most of it into the oats, reserving some for topping.

If needed, add a splash more almond milk or water to reach desired consistency.

Divide the mixture into two bowls.

Top each bowl with the reserved banana slices.
