Quick Ground Beef and Corn Bowl

Ingredients (Serves 1)

Ground beef120 g
Quick-cooking rice50 g
Canned corn75 g
Black beans75 g
Olive oil5 ml
Chili powder2 g
Smoked paprika1 g
Salt1 g
Lettuce30 g
Salsa40 g

Instructions

Prepare the quick-cooking rice according to package instructions. Alternatively, use pre-cooked rice and warm it.

While the rice cooks, heat a small amount of olive oil (approx. 5 ml) in a pan over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.

Add the canned corn (drained) and canned black beans (rinsed and drained) to the pan with the beef. Add chili powder, smoked paprika, and salt. Stir and cook for 3-4 minutes until heated through and flavors combine.

In a bowl, layer the cooked rice, then the ground beef mixture. Top generously with shredded seasonal lettuce and fresh salsa.

Optionally, add a sprinkle of cheese or a squeeze of lime juice.
