Cooked rice0.5 cup
Fresh spinach, packed1 cup
Medium onion, diced0.3 pcs
Frozen mixed vegetables0.5 cup
Garlic, minced1 cloves
Olive oil or dairy-free butter alternative0.4 tbsp
Dairy-free soy sauce0.5 tsp
Salt0 to taste
Black pepper0 to taste

Instructions

Heat olive oil or dairy-free butter in a large non-stick skillet over medium heat.

Add diced onion and cook until softened, about 3-4 minutes.

Add minced garlic and cook for 1 minute more until fragrant.

Stir in cooked chicken, mixed vegetables, and spinach. Cook until vegetables are heated through and spinach is wilted, about 3-5 minutes.

While vegetables are cooking, whisk eggs in a bowl with salt, pepper, and dairy-free soy sauce.

Push the chicken and vegetable mixture to one side of the skillet. Pour the egg mixture into the empty side.
