Bell pepper (any color)75 g

Garlic powder1 g
Smoked paprika1 g

Instructions

Dice the chicken breast into small pieces. Dice the potatoes, onion, and bell pepper into similar-sized cubes.

Heat olive oil in a large non-stick pan or skillet over medium-high heat.

Add the diced potatoes and cook for 5-7 minutes, stirring occasionally, until they start to brown and soften.

Add the diced chicken, onion, and bell pepper to the pan. Season with garlic powder, smoked paprika, salt, and black pepper.

Cook, stirring frequently, until the chicken is cooked through and the vegetables are tender, about 7-10 minutes.

While the chicken and vegetables cook, whisk the eggs in a small bowl.

Push the chicken and vegetable mixture to one side of the pan. Pour the whisked eggs into the empty side.
